I love Sundays breakfasts. It is one of the best parts of the weekend when I can wake up early in the morning and prepare some fresh and delicious meal. I am trying new variations of my favourite eggs and full of healthy fat sardines. It is super easy and fast recipe, I promise! In this recipe I used my homemade keto bread, however it is only optional, you can also easily prepare the meal without it. Let me introduce you boiled eggs and sardines salad for keto pescatarian breakfast.

How to prepare boiled eggs and sardines salad for keto pescatarian breakfast?

Preparation time: around 15 minutes

Servings: for two people

Boiled Eggs and Sardines Salad for Keto Breakfast

Ingredients

  • 2 slices of homemade keto bread (optional)
  • 1 ripe avocado
  • salt, pepper
  • 4-5 boiled eggs (depends how hungry you are, I used 9 eggs, 5 for my boyfriend and 4 for myself)
  • 1 tomato
  • 1 small red onion
  • 4 leafs of lettuce
  • 1 can of sardines in olive oil

Boiled Eggs and Sardines Salad for Keto Breakfast

Instructions

  1. Add pinch of salt and eggs to boiling water and boil for 7minutes
  2. Chop onion, tomato and lettuce
  3. Mash avocados in the bowl into a pure, add salt, pepper, chopped tomato, onion, lettuce
  4. Prepare two slices of homemade keto bread
  5. Prepare plate, add homemade keto bread, eggs cut into half and salad
  6. Enjoy!

Notes

Vegetarian: For vegetarian option do not add sardines

Eggs: Boil eggs for 7 minutes if you prefer soft yolk and hard white, boil for 8 minutes for hard yolk
