Quick Coconut Berries Ice Cream Jars - Healthy Keto Low Carb No Sugar Dessert Try

I have been thinking for awhile how to name this dessert. Since I kept them in the freezer, I thought that it can be some type of ice creams but it can also be kind of mousse if you kept them in the room temperature. Anyway, this recipe was created totally accidentally. As usual we have been chilling in the evening and we wanted something sweet. I mixed a few thing with frozen berries from our freezer and came up with this. I made it again for my boyfriend’s birthday party with homemade Raffaello and Ferrero Roche. Did you know that our guests thought that these jars are just decoration? I am not really sure if it is good or bad haha. Let me know in the comments if you have made something similar already. How to make keto, low carb, sugar free, coconut berries ice cream jars?

Preparation time: around 10 minutes Freezing Time: 30 min

Servings: 6 jars

Ingredients

  • 1 cup of coconut milk
  • 1/4 cup of coco sugar or sweetener for keto and no sugar recipe
  • 1/2 cup of coconut shreds
  • 1/2 cup of sliced almonds
  • 1 tablespoon of chia seed
  • handful of dried berries
  • 2 handfuls of frozen berries

Instructions

  1. In the bowl mix coconut milk, coco sugar or sweetener, coconut shreds, chai seeds, 1/4 cup of sliced almonds and 3/4 handful of dried berries together.
  2. Prepare 6 jars.
  3. Fill each jar with 2 tablespoons of mixture.
  4. Get a few frozen berries and spread on each jar.
  5. Get a few dried berries and spread on each jar.
  6. Spread a few sliced of almonds and a little bit of coconut shreds.
  7. Put into the freezer for 30mins and serve!

Notes

Keep in the freezer for a few days maximum.

Feel free to change fruits or add some syrup if your diet allows. Be creative!
