Filipinos love meat! While preparing my boyfriend’s birthday party I was thinking a lot how to prepare meat for them. I decided to go ahead with healthier version of our polish “kotlety schabowe”. I have exchanged a few ingredients and made my own version. This recipe is for 2 meals but you can see in the pictures that I made so many of them! Since I prepared it for a party, I made it for 20 people and served cold with salads and sauces. So if you are wondering what to do as party snack, feel free to use this recipe! I am looking forward to your comments!
Course: Main Course
Keyword: Almonds, Chicken, Coconut Flour, Eggs, Flaxseed, Healthly
Servings: 2 people
Ingredients
  • 2 chicken breasts or 2 fishes
  • 2 eggs
  • 3/4 cup of coconut flour
  • 1 cup of chopped almonds
  • 1/2 cup of flaxseed meat optional
  • pink Himalayan salt and black pepper
  • coconut oil or olive oil for frying
Instructions
  1. Clean chicken breasts or fishes.
  2. Spread some black pepper and pink Himalayan salt all over the chicken or fish.
  3. Get soup plate or bowl and add eggs into it.
  4. Add salt and pepper to eggs and mix. Feel free to add as much as you like.
  5. Prepare plate with coconut flour on it.
  6. Prepare another plate with chopped almonds and flaxseed meat mixed together.
  7. To make your life easier, put your plates in following order: plate with coconut flour first, bowl with eggs second and then plate with almonds and flaxseed meat.
  8. Heat your pan with oil.
  9. Get the chicken or fish and cover in coconut flour in the first plate.
  10. Transfer to bowl with eggs and cover meat in it.
  11. Then transfer meat on the third plate and cover in almonds and flaxseed meat.
  12. As soon as it is done, transfer meat on the pan and fry.
  13. Fish needs just a few minutes to get ready. Chicken needs a bit longer, so just fry it for like 5 minutes on the side till cover is golden. The time of frying depends on how big your meat is.
  14. Server with our homemade avocado dip or homemade ricotta dip. Also I love it with homemade peanut sauce.
Recipe Notes

Serve warm since it tastes much better. However I like it in cold version as well.

You can cut it into small pieces and mix with salad.
