Homemade Vegan Paleo Keto No Sugar Quick Snack

I love nuts bars, I could eat them every day. However, most of the granola bars in the stores have sugar added. I decided to show you a healthy and quick version of these nut bars. It is a vegan, paleo and keto dessert, perfect for you or your kids lunchbox.

Ingredients
Nut Base
  • 4 tablespoons of peanut butter
  • 4 tablespoons of coconut oil
  • 2 tablespoons coco syrup or sweetener for keto and no sugar diet
  • 1/2 tablespoon of vanilla extract
  • 1/2 tablespoon of cinnamon
  • 1/4 cup sliced almonds + extra 1 tablespoon to decorate on top
  • 1/4 cup sliced walnuts + extra 1 tablespoon to decorate on top
  • 1/6 cup sliced pecans + extra 1 tablespoon to decorate on top
  • 1/2 cup of dried cranberries, blueberries and strawberries
  • 1/3 cup of flaxseed meal
  • 1 tablespoon of chia seeds
  • 1/3 cup of pumpkin seeds
  • 1/4 cup unsweetened shredded coconut
  • 1 spoon of collagen
Toppings
  • 1 tablespoon of coconut oil
  • 1/2 tablespoon of peanut butter
  • 25 g of dark chocolate
Instructions
  1. Add peanut butter, collagen, 2 tablespoons of coconut oil, coco syrup or sweetener, vanilla extract and cinnamon to the bowl.
  2. Microwave for 1 minute, mix in the middle of this time, after around 30 seconds and continue microwaving.
  3. Add all nuts, fruits, seeds and mix together till smooth.
  4. Line baking paper onto the pan and spread mixture on it.
  5. Transfer to the freezer for 20 minutes.
  6. In the bowl mix together ingredients for topping.
  7. Microwave for 1 minute, mix in the middle of this time, after around 30 seconds and continue microwaving.
  8. Mix all together till smooth.
  9. Get base from the freezer and spread topping all over the top.
  10. Add some nuts on the top.
  11. Transfer to the freezer for around 1 hour.
  12. Cut into 6 bars.
  13. Serve.
