Healthy Keto Vegetarian Egg Stuffed Avocados With Grilled Zucchini And Tofu

On the day of creating this recipe, I had a different plan for dinner. Unfortunately, I discovered I have only one small zucchini in the fridge which was not enough for my planned experiment. I decided to make a quick dinner from the products I had in the fridge. Maybe this meal is not the most presentable dish, but tasted delicious!

  • 1 small zucchini
  • 1/2 block of tofu
  • 2 tablespoons of cream cheese
  • 1 to mato
  • 2 chilli peppers
  • 2 eggs
  • 1 medium ripe avocado
  • olives
  • coconut oil
  • 1 red medium onion
  • salt, pepper, turmeric, oregano
  1. Dry tofu for 15 minutes covered in kitchen towels.
  2. After 15 minutes, marinate tofu in salt, pepper, turmeric and oregano for another 15 minutes.
  3. Preheat pan with coconut oil.
  4. Grill tofu for 10 minutes.
  5. Cut zucchini, tomato, chilli peppers, eggs, olives and onion into small slices.
  6. Add zucchini, tomato, chilli peppers, eggs, olives and onion to the tofu on the pan and grill for another 10 minutes.
  7. Cut avocados into two pieces and remove seed.
  8. Add a tablespoon of cream cheese for each half of avocado, transfer avocado halves into a pan and place around vegetables.
  9. Add eggs on the top of the avocados.
  10. Cover pan with lid and fry for 10 minutes or until the egg is ready.
  11. Transfer everything onto the plate and enjoy!
Recipe Notes

It is a really quick recipe if you have already prepared tofu.

Feel free to add carrot or mushrooms.
