Stuffed Meatloaf With Cheese Spinach Mushrooms Keto Low Carb

I remember like years ago, in age 16 years old I was doing similar meatloaf for my boyfriend that time. As you probably knows I am not big fun of beef but it is still a big part of my diet. Because of it I am trying to be creative and prepare beef in many different ways. This stuffed meatloaf with cheese, spinach and mushrooms came up to be pretty delicious healthy, keto and low carb recipe.

How to prepare healthy, keto and low carb stuffed meatloaf with cheese, spinach, mushrooms?

Preparation time: around 15 minutes Cooking time: around 45 minutes

Servings: 1 loaf, around 6 slices

Ingredients

  • 1/4 kg of ground beef
  • 1 large egg
  • 1/3 cup of mix of herbs, like cilantro, coriander, spring onion, parsley, any other
  • 2 pinches of each of the following spices: salt, pepper, garlic powder, onion powder, chilli powder (or any other spices which you prefer)
  • 1 tablespoon of coconut flour
  • 2 tablespoons of flaxseed meat (if you don’t have flaxseed, just use coconut flour)
  • 1 spoon of bone broth powder or collagen (optional, add more of coconut flour or flaxseed meal if you are not using any bone broth powder nor collagen)
  • 1 onion
  • 3 mushrooms
  • 1 tomato
  • 50g of shredded mozzarella cheese
  • 2 tablespoons of coconut oil or olive oil
  • 1 handful of spinach
  • 1 handful of mix of salads

Instructions

  1. Chop cilantro, coriander, spring onion, parsley and any other herbs.
  2. Slice onion, tomato, mushrooms.
  3. Mix beef, egg, coconut flour, flaxseed meat, bone broth powder or collagen and herbs in the bowl.
  4. Add spices and mix all together.
  5. Line baking loft type of pan with baking paper. Spread 2 tablespoon of oil and cover with 1 tablespoon of flaxseed meal or coconut flour.
  6. Transfer mixture into pan, make sure meat sticks to it.
  7. Cover first layer with spinach. Then add onions, tomatoes and mozzarella. Yes, my mozzarella got a bit destroyed, but well.
  8. Preheat oven to 180 C (355 F)  and bake for 45-50 minutes.
  9. Meantime prepare mix of salad and spinach, place on the plate.
  10. Add pinch of Himalayan pink salt and black pepper. Add a little bit of apple vinegar optionally.
  11. Get meatloaf and cut into slices.
  12. Transfer on the earlier prepared plate with salads.
  13. Serve with mustard sauce or cream cheese sauce.
  14. Enjoy!

Notes

Play with the vegetables and layers. In the past I have done it in the way of layers, first meat, then some type of vegetables, then again meat and again another vegetables.
