Low Carb Paleo Cauliflower Broccoli & Coconut Flour Fritters

Cauliflower was in our fridge for a while and nobody knew what to do about it. I decided to give it a try and make a new recipe. I was looking into old-school Polish recipes to find something what can fit into my diet. There was a couple of Polish dishes which came to my mind, like potato pancakes for example. It was just an inspiration. And here we are… low carb and paleo cauliflower or broccoli fritters based on coconut flour.

How to prepare low carb paleo cauliflower broccoli & coconut flour fritters?

Preparation time: around 45 minutes

Servings: around 20 fritters

Ingredients

    • 2 small heads of cauliflower or mix with broccoli, alternatively 2 1/2 cup of grated cauliflower/broccoli – I used cauliflower and broccoli first time, second time I just used cauliflower as I didn’t have broccoli
    • 1 brown onion
    • 4 eggs
    • 100 grams of white cheese
    • 3/4 cup of coconut flour
    • 1/4 cup of chopped cilantro
    • 1 garlic clove
    • 2 small chilli peppers
    • 3/4 cup of grated cheese, in my case parmesan
    • 3 tablespoons olive oil or more
    • salt, pepper

Instructions

  1. Cut cauliflower/broccoli into small florets and process in food processor till you get a texture of rice.
  2. Chop onion, garlic, white cheese, cilantro and chilli peppers.
  3. Place cauliflower/broccoli rice, onion, garlic, white cheese, cilantro, chilli peppers, eggs, coconut flour and grated cheese into large mixing bowl.
  4. Combine all together, add salt and pepper.
  5. Preheat pan with olive oil.
  6. Shape fritters, smaller or bigger, depending on your preferences.
  7. Fry fritters in olive oil for around 5 minutes on one side.
  8. Serve with coconut milk sauce or avocado pure.
  9. Enjoy!

Notes

Feel free to add fritters to fish or serve with salad.

For more recipes more keto oriented, use more cheese and serve with coconut milk sauce, eggs or alternatively with salmon or sardines.

You can keep it in the fridge for around 2-3 days.
