A quick and delicious dessert with the products you have at home for sure. I love this recipe for really handy little truffles which you can take everywhere as a snack. It is a great dessert for friends and family events.

Preparation time: around 10 minutes plus 1 hour and 20 minutes of refrigeration
Servings:Â 18 truffles
Ingredients
- 1/4 cup of chia seeds
- 1 teaspoon of vanilla extract
- 2 tablespoons of coco syrupc or sweetener if you are not sure about your brand of coco syrup
- 1 1/2 cup of crunchy peanut butter unsweetened
- 1 cup of coconut flour
- 1/4 cup of coconut sugar, use sweetener for keto diet
- cinnamon
- 2 tablespoons of coconut oil
- 1/2 cup of unsweetened cacao or 1/2 of a dark chocolate bar
Instructions
- Mix peanut butter, coconut flour, coconut sugar (or sweetener), 1/2 teaspoon of vanilla extract and cinnamon in the bowl. Mix until smooth.
- Prepare a baking tray lined with baking paper.
- Cover your hands in coconut oil so the mixture will not stick.
- Use a tablespoon to get the mixture from the bowl.
- Form around 18 small truffles (1 tablespoon of mixture per truffle) and transfer them onto baking tray.
- Refrigerate for 1 hour.
- Meantime melt dark chocolate (or unsweetened cacao) with coconut oil, 1/2 teaspoon of vanilla extract and coco syrup (or sweetener). You can melt everything in the microwave for 40 seconds.
- Get truffles from the freezer and dip them into chocolate using a fork.
- Place them on the baking tray lined with baking paper.
- Spread chia seeds, coconut sugar and cinnamon on the top of the truffles. Be fast enough, chocolate will go hard really quickly, spread seeds, sugar and cinnamon early enough so they stick to the truffles.
- Refrigerate for 20 minutes.
- After 10-20 minutes, transfer onto the plate and enjoy!
Notes
Store in the freezer, you can keep cookies for couple of days.
