Since me and my boyfriend have started keto diet (low carbs, a lot of healthy fat) I decided to find some cooking inspirations. I have never been a big fan of cooking itself but recently I found it exciting to create my own keto recipes. For my boyfriend’s birthday I decided to prepare some nice healthy dessert which can be eaten by us and our guests. In this way I created my famous already keto vegan healthy chocolate truffles based on avocado for dessert or snack.

How to make keto vegan healthy chocolate truffles for dessert?
Preparation time: around 30 minutes (with 1 hour break)
No baking required
Vegan, diary free, paleo, keto
Servings: depends on how big truffles you will make, I made around 15
Ingredients
- 2 medium ripe avocados (you can make this recipe only with 1 avocado, you will just get less truffles 🙂 )
- 2 tablespoons of coco syrup or sweetener if you are not sure about your coco syrup brand
- 1 bar of dark chocolate
- 6 tablespoons of unsweetened cacao
- 1 tablespoon of unsweetened peanut butter (optional)
- toppings like nuts, berries, coconut shreds or cacao powder
Instructions
- Mash avocados in the bowl into a pure.
- Melt the chocolate (30 sec in the microwave) and add to the avocados. Add coco syrup or sweetener, unsweetened cacao and peanut butter. Stir to combine.
- Put to the refrigerate for about 1 hours. It is important step to make truffles easier to roll.
- Roll truffles (grease your hands in coconut oil before to make it easier) and cover in the topping such as coconut shreds or unsweetened cacao powder. Put to the refrigerate for about 1 hour for better texture.
- Enjoy!
Notes
Just be creative. You can make truffles a little bit bitter or sweeter, just play with different type of dark chocolate.
You can also add coconut sugar if you don’t care about sugar so much, for no keto oriented recipe.
To make avocados more softer, leave them in the room temperature for one day next to bananas.
