Keto Low Carb Sugar Free Peanut Butter Cookies From 3 Ingredients

I need to tell you – these cookies are awesome! And I really mean it. Do you remember the little biscuits from childhood? Little cookies you eat with a cup of milk? That’s exactly how I would describe this recipe with a little difference, these cookies are healthy, use only 3 ingredients and you will make them in just a couple of minutes! How cool is that?! Moreover, the cookies are perfect for travelling, just prepare them before leaving home and pack them into a plastic box, you are ready to go – keto, low carb, sugar free, peanut butter, cookies from 3 ingredients!

How to make keto, low carb, sugar free, peanut butter cookies from 3 ingredients only?

Preparation and cooking time: around 20 minutes

Servings: 11 cookies

Ingredients

  • 5 tablespoons of unsweetened peanut butter
  • 2 eggs
  • 2 tablespoons of coco syrup or any other sweetener (feel free to add more if you like really sweet desserts, if you are not sure about brand of your coco syrup, use sweetener for keto diet)
  • 2 tablespoons of coconut sugar (optional, skip for keto diet)
  • chia seeds for topping (optional)

In case you want more cookies, double the ingredients. In this case, the mixture will be more soft, just don’t press cookies with the forks and leave it as it is. You will get cookies like the picture above.

Instructions

  1. Mix the peanut butter, eggs, coco syrup and coco sugar (if you are using) in the bowl, until they become smooth in texture.
  2. Line baking tray with baking paper.
  3. Get one big tablespoon at a time and form balls, I used 2 tablespoons to form the balls to avoid using my hands.
  4. Place the dough on the baking tray and press twice using a fork or leave as it is.
  5. Sprinkle some chia seeds on the top.
  6. Bake for around 15 minutes or until they become golden brown.
  7. Let it chill for 2 minutes and serve!

Notes

Keep cookies at room temperature.

You can add toppings by mixing 2 tablespoons of unsweetened cacao and 4 tablespoons of coconut oil.

I highly recommend using chia seeds, it makes the cookies crunchy and gives so many health benefits.

You should get around 11 cookies, however, feel free to experiment. Would you like to have bigger cookies? Just go for it and use 2 tablespoons! Would you like to have smaller cookies? Just go for it and use half a tablespoon!

Whilst doing this recipe for the second time, I doubled all the ingredients and got around 34 cookies, which I took to a birthday party for my friend.

Feel free to add any other toppings, maybe some nuts or sesame seeds?
