Homemade Raffaello – Healthy Keto Low Carb Sugar Free Coconut Balls

I am a huge fan of Raffaello. I remember times when I kept asking my friends to buy me Raffaello every time when they visit me. Since I started healthy lifestyle I totally forgot how Raffaello tastes like. For my boyfriend’s birthday party I decided to prepare some of my old recipes but also something new. I decided to prepare homemade Raffaello, Ferrero Roche and Coconut Berries Ice Cream Jars. Let me tell you how I have prepared my favourite Raffaello. How to make homemade Raffaello – healthy, keto, low carb, sugar free, coconut balls?

Preparation time: around 15 minutes Freezing Time: 30 min

Servings: 11 truffles

Ingredients

  • 3 tablespoons of unsweetened peanut butter
  • 1/2 cup of coconut flour
  • 2 tablespoons of coco sugar or sweetener for keto and no sugar recipe
  • 2 tablespoons of coconut oil
  • 1/2 teaspoon of vanilla extract
  • 1/2 cup of coconut milk
  • 1/2 cup of shredded coconut + 1/2 cup of coconut shreds on the side
  • 10-15 full almonds

Instructions

  1. Add peanut butter, coconut flour, coco sugar or sweetener, 1/2 cup of shredded coconut, vanilla, coconut oil and coconut milk to the bowl and mix together till smooth.
  2. Optionally at this point you can add the mixture to the freezer for 10-20 minutes. I was in rush and I didn’t do it and it was still all good.
  3. Get the mass and start scooping out small balls using tablespoon or two tablespoons.
  4. Form balls using your hands. You can first wet your hands with coconut oil, it makes it easier to form balls.
  5. While forming the balls, add one almond per balls in the middle and form till mixed together.
  6. Spread 1/2 cup of coconut shreds on the chop-board and cover balls in it.
  7. Transfer Raffaello to the fridge or freezer for 30 minutes before serving.

Notes

Keep Raffaello in the fridge or freezer for few days maximum.

Feel free to form bigger or smaller balls. Be creative!

What does original Raffaello contain? 

Desiccated coconut, sugar, modified palm oil, modified (palm, sunflower) fats, whole almond, skim milk powder, whey powder, wheat flour, flavourings, lecithin, salt, sodium bicarbonate.
