I love nuts bars, I could eat them every day. However, most of the granola bars in the stores have sugar added. I decided to show you a healthy and quick version of these nut bars. It is a homemade, vegan, paleo, keto, sugar free, granola bar, perfect for you or your kids lunchbox.

Preparation time: around 10 minutes Freezing Time: 1 hr
Servings:Â 6 bars
Ingredients
Nut Base
- 4 tablespoons of peanut butter
- 4 tablespoons of coconut oil
- 2 tablespoons coco syrup or sweetener for keto and no sugar diet
- 1/2 tablespoon of vanilla extract
- 1/2 tablespoon of cinnamon
- 1/4 cup sliced almonds + extra 1 tablespoon to decorate on top
- 1/4 cup sliced walnuts + extra 1 tablespoon to decorate on top
- 1/6 cup sliced pecans + extra 1 tablespoon to decorate on top
- 1/2 cup of dried cranberries, blueberries and strawberries
- 1/3 cup of flaxseed meal
- 1 tablespoon of chia seeds
- 1/3 cup of pumpkin seeds
- 1/4 cup unsweetened shredded coconut
- 1 spoon of collagen
Toppings
- 1 tablespoon of coconut oil
- 1/2 tablespoon of peanut butter
- 25g of dark chocolate
Instructions
- Add peanut butter, collagen, 2 tablespoons of coconut oil, coco syrup or sweetener, vanilla extract and cinnamon to the bowl.
- Microwave for 1 minute, mix in the middle of this time, after around 30 seconds and continue microwaving.
- Add all nuts, fruits, seeds and mix together till smooth.
- Line baking paper onto the pan and spread mixture on it.
- Transfer to the freezer for 20 minutes.
- In the bowl mix together ingredients for topping.
- Microwave for 1 minute, mix in the middle of this time, after around 30 seconds and continue microwaving.
- Mix all together till smooth.
- Get base from the freezer and spread topping all over the top.
- Add some nuts on the top.
- Transfer to the freezer for around 1 hour.
- Cut into 6 bars.
- Serve.
Notes
Keep in the fridge.
Feel free to be creative with toppings, maybe honey if your diet allows?
